The Chimayó Cocktail (using Tanglewood’s Apple Pie)

This signature New Mexico drink goes back to the 60’s when Arutro Jaramillio created the drink because of the plentiful amount of apples from the orchards in the Chimayó valley. He began serving the drink at his restaurant, Rancho de Chimayó in Chimayó, New Mexico where it became popularized. This cocktail is one of New Mexico’s best kept secrets and we’ll show you exactly how to make this crisp, refreshing beverage. 

Not too strong and not too light, the Chimayó is the perfect buzz, just slightly stronger than a glass of wine. Using our 2021 season batch of Tanglewood Winery’s Apple Pie wine mixed with tequila, and a few other ingredients you can’t go wrong with this crisp cocktail.

Ingredients:

  • 1 1/2 ounces tequila 
  • 1/4 ounce crème de cassis liqueur
  • 1 ounce Apple Pie wine
  • 1/2 ounce freshly squeezed-lemon juice
  • Apple slices, for garnish

Directions: 

  1. Gather all of the ingredients.

  2. Fill a low-ball glass with ice.

  3. Squeeze half a lemon into a small bowl, measure ½ ounce, and pour into the glass.

4. Using your favorite tequila (we used Mi Campo!) pour 1 ½ ounces into the glass.

5. Pour ¼ ounce of crème de cassis into the glass.

6. Pour 1 ounce of Apple Pie wine into the glass

7. Stir well.

8. Garnish with apple slices. Serve and enjoy.
